Grilling Vegetables: Summer Squash and Zucchini

Seasoned oil: 6 tablespoons olive oil, 2 tablespoons white wine vinegar, 1 clove garlic minced, 1 tablespoon minced oregano, pinch salt


Brush grill with oil.
Brush 4 zucchinis or summer squashes cut into 1/3 inch rounds with seasoned oil.
Place directly on grill in a single lay and cook over high heat, turning occasionally, until very tender, about 8-12 minutes.

Sprinkle with grated Parmesan cheese before serving.
