Basic Custard

1/3 cup sugar
1 tablespoon enriched flour
1 tablespoon corn starch
1 1/2 cups milk
1 beaten egg yolk
1 teaspoon vanilla
1/2 cup heavy cream, whipped


Combine sugar, flour, cornstarch and salt
Gradually stir in milk and place over medium heat until mixture thickens and boils
Cook, stirring 2-3 minutes
Stir a little of mixture into egg yolk and return to hot mixture, stirring
Return to boil and add vanilla
Cover with plastic wrap and cool
When cool, fold in whipped cream
Serve with fruit, or use as filling for cream puffs
