Deviled Eggs with 2 variations

6 extra-large hard boiled eggs
5 Tbs. mayonnaise
2 teaspoons brown mustard
1/4 teaspoon salt
Paprika
1 Tbs. finely chopped fresh chives


Peel eggs and slice in half lengthwise.
Remove yolks and mash them.
Stir in mayonnaise, mustard, and salt. Mix well.
Spoon mixture into eggs and sprinkle with paprika.
Spicy Deviled Eggs: add five drops of tabasco sauce and 2 1/2 teaspoons minced red onion.

Cajun Deviled Eggs: increase mayonnaise to 1/3 cup. Replace brown mustard with horseradish mustard and add 1 teaspoon cajun seasoning.
