1 yellow pepper
1 red pepper
3/4 pound green beans, trimmed
3/4 pound yellow beans, trimmed
1 teaspoon olive oil
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons toasted pine nuts
2 teaspoons grated lemon rind
1 tablespoon lemon juice
Roast and peel pepper. Cut into thin strips.
Place beans in boiling water and cook 4 minutes. Rinse to cool.
Heat oil and add pepper strips, beans, garlic, slat and pepper. Saute 2 minutes.
Remove from heat and add nuts, rind and juice.
