2 tablespoons olive oil
1 while onion, diced
2 garlic cloves, minced
1 ? cups long grain white rice
2 ? cups vegetable stock
? cup chopped fresh cilantro
1 poblano chile, seeded and diced
Salt and pepper to taste
Heat oil in large saucepan and saut? onion about 8 minutes.
Add garlic, saut? 2 minutes more.
Add rice and stir to coat.
Add stock and bring to boil. Reduce to simmer and cook about 15 minutes until rice is tender.
Remove from heat. Let stand, covered 5-10 minutes until liquid is absorbed.
Fluff and stir in cilantro and poblano.
Season to taste with salt and pepper.
