Split Pea Soup

1 lb. split green peas
1 yellow onion, diced
12 cups vegetable broth
2 carrots, sliced
4 potatoes, diced


Rinse, sort and soak peas
Bring broth and onions to simmer in 12 quart stock pot
Add peas, potatoes and carrots
Simmer, co
vered, 1-2 hours until peas are tender
Season with salt, black and white pepper, Mrs. Dash, Veg-It, Cayenne pepper and curry powder
riations: For a creamier soup, add a little cream or milk and a tablespoon of butter in the last ten minutes of cooking

Serve with warm bread
