Farfalle with Greek Sauce

3 tablespoons olive oil
1 large garlic clove, minced
1 teaspoon dried oregano
3/4 pound ripe tomatoes, seeded and diced
1/2 teaspoon salt, or to taste
fresh ground black pepper to taste
1/2 cup Kalamata olives, sliced
1 cup crumbled feta
1/4 cup freshly grated Parasan
2 green onions chopped
8 oz. pasta*


Combine ingredients in heat proof bowl
Start pasta* in large pot
Place bowl over boiling pasta to warm
When pasta is al dente, drain well and toss with sauce
Add cilantro and toss again
Toss again with feta and serve immediately

*Recommended pasta – farfalle, malfalda or linguine
