Mussels Creole

1 pound mussels in shells
1 cup salt
1 small green sweet pepper, finely chopped
1/2 cup finely chopped onion
3 cloves garlic, minced
1 tablespoon butter
1 teaspoon Cajun seasoning
1 cup dry white wine
1 medium tomato, chopped
2 teaspoons snipped fresh oregano
2 teaspoons snipped fresh thyme
8 to 12 slices baguette-style French bread


Saute sweet pepper, onion, and garlic in hot butter over medium-high heat for 4 to 5 minutes or until onions are tender.
Add Cajun seasoning; cook and stir for 2 minutes more.
Add wine and bring to boiling.
Add mussels and cook, covered, for 5 to 7 minutes.
Remove mussels. Stir tomato, oregano, and thyme into cooking liquid and heat through.
Pour mixture over mussels.
Serve with bread.
