Sopa de Fideo

1 tablespoon oil
1 yellow onion, chopped
1 red or green pepper, chopped
4 cloves of garlic, minced
1 jalapeno, minced
8 cups vegetable stock
1 potato, diced
2 carrots, sliced
1 14 oz. can diced tomatoes
2 tablespoons dried parsley
1 tablespoon dried oregano
2 tablespoons ground cumin
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
4 oz. angel hair

saute onion, pepper, garlic and jalapeno in one tablespoon oil
Add 8 cups vegetable stock, potato, carrot tomatoes and spices
Simmer 30-35 minutes
Snap pasta in half, add to soup
Maintain low boil about 10 minutes until pasta is tender

Top with grated sharp cheddar cheese and serve with warm tortillas or pita bread.
