Caribbean Corn

2 cups fresh corn kernels or 2 cans, drained
3 ripe tomatoes, skinned and chopped
1/2 small red or green bell pepper, chopped
1 medium sized yellow onion, chopped
3/4 cup dark rum
1 jalapeno, seeded and minced
2 teaspoons dried oregano
salt and pepper to taste (about a teaspoon of each)
3/4 teaspoon cumin
1/2 teaspoon coriander

In medium sized pot, combine all the ingredients.
Bring to boil, reduce heat and cover.
Simmer 10 minutes, stirring occasionally.

Also good tossed with pasta.
