Curried Chick Peas and Orzo

3 tablespoons olive oil
1 cup chopped onion
1 carrot, finely diced
2 garlic cloves, minced
1 1/2 teaspoons curry powder
1/2 teaspoon dried thyme
1 cup orzo
5 1/2 cups vegetable stock
1 15 oz. can of chick peas, drained and rinsed
2 teaspoons Sriracha

Heat oil over medium heat in large, deep skillet with lid
Saute onion, carrot and garlic with the curry powder and thyme until onion is soft
Add orzo and saute until pasta is lightly browned
Add stock, chick peas and Sriracha
Bring to boil, cover with tight-fitting lid and reduce heat to low
Simmer until orzo is fully cooked – it should be brothy

Serve with yogurt
