Black Eyed Pea, Corn and Brown Rice Salad

3 tablespoons canola oil
2 tablespoons red wine vinegar
1 teaspoon Dijon style mustard
3-4 tablespoons chopped fresh parsley or 2 tablespoons dried
1/2 teaspoon ground black pepper
1/4 teaspoon salt
1 1/2 cups cooked black eyed peas
2 cups cooked brown rice
1 can yellow corn
2 cloves garlic, minced
2 large scallions, chopped
2 tablespoons chopped roasted sweet peppers


Whisk together oil, vinegar, mustard and seasonings
Blend in peas, rice, corn, garlic, scallions and roasted peppers
Chill 1 hour before serving
