Snow Peas with Orange

1 teaspoon canola oil
1 teaspoon finely chopped garlic
grated zest of one orange
1/2 pound (3 cups) snow peas, stems and strings removed
2 tablespoons orange juice
salt and pepper to taste


Heat oil in medium sized skillet over medium heat, saute garlic and orange zest about 30 seconds
Add snow peas and orange juice
Cover and cook about 2-3 minutes until peas are tender
Uncover and cook until the juices thicken slightly, about one minute
Season with salt and pepper
