1 small eggplant
1 red bell pepper
1 large Vidalia onion
1 small zucchini
Olive oil (in mister)
Cut all vegetables in half lengthwise into ? inch thick slices
Spray lightly with olive oil (or cooking spray)
Place on grill (or in grill pan in oven) and cook, turning and spraying often, until all are brown and tender (about 10 minutes).
