Gvetch – Oven Baked Vegetables

1 sweet potato in one-inch dice
1 white potato in one-inch dice
1 diced onion
1 carrot, sliced
1 eggplant, cubed
1 parsnip, sliced
1 zucchini, sliced
1 green bell pepper, sliced
1 red bell pepper, sliced
1/2 cauliflower in bite-sized pieces
1/4 pound green beans, trimmed

For sauce:
1/2 cup white wine
2 tablespoons tomato paste
1 1/2 cup vegetable broth
paprika and thyme to taste

Combine all vegetables in baking dish.
Combine sauce ingredients and pour sauce over vegetables.
Bake until vegetables are tender.
