Oven-Roasted Blackened Potatoes

1 ? pounds new potatoes, skins on, quartered
olive oil in a mister
dried parsley
salt, pepper and blackening seasoning to taste


Boil potatoes until tender.
Mist a sheet of foil with olive oil. Place potatoes in single layer on sheet.
Mist potatoes with olive oil. Sprinkle with parsley.
Season with salt, pepper and blackening seasoning.
Bake at 400 degrees, turning once, until crisp all over.
Fold foil into a packet to keep hot until ready to serve.

Also fine grilled.
