4 ounces rice noodles
4 teaspoons peanut oil (separated)
1/2 cup thinly sliced shallots
1/4 cup chopped green onions
1/4 cup chopped fresh cilantro
1 tablespoon fish sauce
1-2 teaspoons sugar
2 teaspoons chopped peanuts
Soak rice nooldes in arm water for 20 minutes. Drain, toss with 2 teaspoons peanut oil.
Heat 2 teapoons peanut oil in nonstick skillet over medium-high heat. Saute shallots 1 minute.
Add noodles to pan and cook 3 minutes, or until thoroughtly heated, tossing well.
Stir in green onions and cilantro.
Top each serving with peanuts.
