2 teaspoons olive oil
2 garlic cloves, minced
1 pound medium shrimp, peeled and deveined
2 cups chopped plum tomato
1/4 cup thinly sliced fresh basil
2/3 cup pitted chopped kalamata olives
2 tablespoons capers, drained
1/4 teaspoon black pepper
4 cups cooked pasta (about 8 ounces uncooked)
1/4 cup feta cheese
Heat oil in skillet over medium high heat. Add garlic and saute 30 seconds.
Add shrimp and saute one minute
Add tomato and basil, reduce heat, and simmer 3 minutes or until tomato is tneder.
Stir in olives, capers, adn black pepper.
Combine shrimp mixture and pasta in a large bowl. Tosse well and top with cheese.
