2 tablesppons red wine venegar
2 teaspoons Dijon mustard
1 teaspoon olive oil
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon crushed red pepper
2 minced garlic cloves
3 cups chopped cucumber
2 cups halved cherry tomatoes
1 cup chopped yellow bell pepper
1/4 cup finely chopped red onion
1/4 cup halved kalamata olives
To prepare vinaigrette, combine all ingredients in shaker and shake until emulified.
To prepare salad, toss all ingredients and serve as is, or toss with lettuce and feta.
