10 ounces thin macaroni
2 cups milk
3 tablespoons sour cream or creme fraiche
4 tablesppons butter
1/4 cup flour
salt and pepper to taste
1 2/3 cups Beaufort cheese
Butter a 12 inch baking dish.
Cook macaroni in boiling, well salted water. Drain and return to empty sauce pan.
Heat milk in separate saucepan and stir in sour cream. Melt the butter in another saucepan over medium high heat. Stir in flour and cook, stirring constantly, for three minutes. Pour in the milk mixture and stir constantly until the mixture thickens. Season with salt and epper.
Stir the milk mixture into the macaroni and taste, adding salt and pepper if necessary. Transfer to baking dish and sprinkle with cheese.
Cook under broiler unti bubbling and browened, 10-15 minutes. Serve hot.
