1 pound bean sprouts
1 fresh red chili, seeded and finely shredded
1 1/2 tablespoons light soy sauce
1 teaspoon peanut oil
2 teaspoons sesame oil
1 teaspoon chili oil
1 teaspoon finely chopped garlic
2 tablespoons finely chopped scallions
1/2 teaspoon sugar
1/2 teaspoon salt
1/4 teaspon white pepper
Trim and discard ends of bean sprouts. Blanch in boilding water for 1 minute. Drain, immerse in cold water, then drain again.
Combine dressing ingredients in a small bowl. Mix with sprouts and chili to serve.
