Cucumber Noodle Salad

1/2 pound bean thread noodles
1/2 pound cucumbers

3 tablespoons light soy sauce
2 tablespoons Chinese white rice vinegar or cider vinegar
2 tablespoons chili oil
1 tablespoon sugar
1 tablespoon peanut oil
2 teaspoons finely chopped ginger
3 tablespoons finely chopped scallions

Soak noodles in very hot water for five minutes. Drain and immerse in cold water, then drain thoroughly in a colander. Cut noodles into 3-inch lengths.

Peel cucumbers, slice in half lengthwise, and remove seeds. Cut the cucumber halves into 3-inch lengths, 1/4 inch thick.

In a large bowl, combine dressing ingredients then add cucumbers and noodles. Mix well. Serve within three hours.
