1 pound cucumbers
1/4 cup white rice or cider vinegar
1 tablespoon sugar
1 teaspoon salt
1/2 counce fresh red chili, finely sliced
1 teaspoon finely chopped garlic
Slice cucumbers in half lengthwise and remove seeds. Cut into 3 inch x 1/2 inch pieces.
Combine with remaining ingredients and marinate at least four hours in refrigerator, stirring occastionally. Drain before serving.
