Corn and Ginger Fried Rice Pilaf

1 1/4 cups corn kernels
1 tablespoon peanut oil
1 1/2 tablespoons finely chopped ginger
2 tablespoons finely chopped scallions
2 tablespoons rice wine or dry sherry
2 cups cook rice
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons sesame oil


Heat wok and add oil. Put in ginger and scallions and stir fry for a few seconds. Add rice wine and continue to stir fry for a few seconds. Stir in cooked rice and stire fry 5 minutes, then add corn, salt, and pepper and continue to stir fry for 2 minutes. Finally, add sesame oil and stir fry 4 more minutes until the corn is thoroughly cooked.
