Tarte Tatin

3 regular (not cooking) apples
juice of 1/2 lemon
1/4 cup butter, softened
1/3 cup superfine sugar
9 ounces ready-rolled puff pastry


heat oven to 425.

Cut apples into quarters and remove cores. Toss apple quarters in lemon juice.

Spread butter over the base of an 8-inch ovenproof skillet. Sprinkle sugar over base of pan and arrange the aplle wedges on top, rounded side down.

Cook over medium heat for about 15 minutes, or until the butter and sugar have melted and appleas are golden.

Cut pastry into 10-inch round and place on top of the apples. Tuck the edges in whit a knife. Place pan in oven and bake for 15-20 minutes, until pastry is golden.

To serve, place a serving plate on top of the pan, turn both over, and lift off the pan.
