4 tablesppon roughly chopped fresh thyme
4 garlic cloves, chopped
1/2-inch piece gingerroot, chopped
3 red chilies, seeded and finely chopped
1/2 teaspoon grated nutmeg
1/4 teaspoon ground cinnamon
1 taspoon ground allspice
4 tablesppons soy sauce
2 tablesppon white vinegar
salt and pepper to taste
Heat broiler. Broil scallions for 5 minutes, turning once, until tender and a little charred. Chop finely.
Pound together thyme, garlic, ginger, and chilies in a mortar and pestle to form a paste. Pound in chopped scallions.
Stir in spices, soy sacue, vinegar, and seasoning to taste.
Rub into fish or shrip before broiling or grilling.
