Olive and Tomato Salsa

6 plum tomatoes, diced
5 ounces Kalamat olives, whole
6 scallions, sliced
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 garlic clove, chopped
1 tablespoon chopped fresh basil
salt and pepper to tast

Place tomatoes and olives in serving blow and toss together. Sprinkle scallions over.

Whisk together olive oil, balsamic vinegar, garlic, basil and seasonings. Drizzle over salsa and serve immediately.
To serve: PLace a 1/2-inch slice of soft goat cheese on a thick slcie of country bread. Broil until it is bubbling, then serve immediately with salsa on the side.
