Roasted Pepper Salsa

1 red bell pepper, roasted, peeled, and sliced, juices reserved
1 yellow bell pepper, roasted, peeled, and sliced, juices reserved
1 orange bell pepper, roasted, peeled, and sliced, juices reserved
2 garlic cloves, finely chopped
1 tomato, finely chopped
1 tabelspoon chopped flat leaf parsley
2 tablespoons olive oil
1 1/2 tablespoons balsamic vinegar
salt and pepper to taste


Place warm pepper strips in bowl with garlic, tomatoes, and parsley. Whisk together pepper juices, olive oil, vinegar, and salt and peper. Toss with peppers.
