Southwest Spice Rub and Salsa

Spice Rub:

1 tablespoon dark brown sugar
2 teaspoons sweet paprika
1 1/2 teaspoons garlic powder
1 1/2 teaspoons ground ginger
1 tesapoon salt
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cloves

For Salsa:

2 cups seedless green grapes, quartered
1/2 medium green bell pepper, finely diced
2 medium scallions, trimmed and thinly sliced (about 1/4 cup)
1 small fresh jalapeno, minced
2 tablespoons fresh lime juice, more to taste
1/4 teaspoon each salt and black pepper, more to taste


For spice rub, combine all ingredients and use to season fish.

For salsa, combine all ingredients. Let stand while fish cooks. Adjust seasonings and serve.
