Pasta with Tomatoes and Lemon Zest

2 large cloves garlic, finely chopped
1 pound fresh, ripe tomatoes, seeded and coarsely diced
Grated zest of 2 medium lemons
? teaspoon salt, or to taste
freshly ground black pepper
3 tablespoons olive oil
? cup freshly grated Parmesan

Combine all ingredients and set aside. Keep at room temperature while pasta cooks. Toss with cooked pasta.

Recommended pasta: 8 ounces shells, penne, or fusilli.
