Bruschetta: Tomato, Basil and Mozzarella

1 pound plum tomatoes, peeled, seeded, and diced
2 tablespoons olive oil
2 cloves garlic, minced
? teaspoon salt
? teaspoon black pepper, plus more to taste
3 tablespoons finely chopped fresh basil
1 tablespoon finely chopped fresh flat-leaf parsley
? pound fresh mozzarella, cut into ? inch cubes

Combine all ingredients and serve with 8-10 slices grilled Italian bread.
