14 ounces fettucine
1 large garlic clove, peeled and crushed
2-4 tablespoons olive oil
finely grated rind of 1 lemon
juice of 1 lemon
freshly ground black pepper
torn flat leaf parsley to serve
grated Parmesan cheese to serve
Heat water for pasta. When water boils, add pasta and a tablespoon of salt. Just before pasta is ready, add peas and cook briefly to finish pasta and heat peas.
Meanwhile, saut? garlic in olive oil 2-3 minutes. Do not brown.
Drain pasta and peas and return to warm pan. Add garlic and oil, lemon rind, lemon juice, and black pepper. Toss and serve with parsley and parmesan.
