4 pounds yams, peeled and cut into 1-inch chunks
4 tablespoons maple syrup
6 tablespoons olive oil
coarse sea salt
? cup coconut milk, warmed, plus more as needed
Heat oven to 375. Lightly oil a baking dish or roasting pan.
In a large bowl, combine yams, maple syrup, olive oil, and ? teaspoon seas salt. Toss well. Transfer yams to prepared pan and roast for 40 minutes, stirring every 10 minutes, until slightly crisp at edges.
Remove from oven. In food processor, combine yams with warmed coconut milk. Puree, adding more coconut milk to reach desired consistency.
