2 small sweet potatoes, cut into 1/3 inch dice
2 tablespoons canola oil
salt and pepper
3 tablespoons butter, melted
4 cloves of garlic, minced
Heat oven to 500. Lightly oil a roasting pan or half sheet pan.
In a bowl, combine sweet potatoes, oil, and salt and pepper, tossing to coat well. Place sweet potatoes in a single layer in pan. Do not crowd.
Place pan in lower third of oven and roast sweet potatoes for 15 minutes, shaking the pan once.
Combine butter and garlic in a small bowl. Pour over potatoes and toss to coat. Roast for another 10-15 minutes, until potatoes are slightly crisp. Do not overcook, or the garlic will become bitter.
