Apple Salsa and Brie Crostini

2 tablespoons cider vinegar
1 teaspoon olive oil
? teaspoon honey
dash of salt and pepper
1 granny smith apple, peeled, cored, and finely diced
2 tablespoons finely chopped bell pepper
2 tablespoons finely chopped red onion
2 tablespoons minced cilantro

12 crostini
? cup rindless Brie


Heat broiler.

To make salsa, stir together vinegar, oil, honey, salt, and pepper. Add apple, bell pepper, onion, and cilantro. Toss and adjust seasonings.

To serve, mound each crostini with 1 tablespoon of salsa. Top with 2 teaspoons of cheese. Arrange on baking sheet. Broil 5 inches from source for 1 minute or until cheese is melted. Serve warm.

Salsa will keep for up to 2 days.
