Cider-Braised Apples

4 large Granny Smith apples, peeled, cored and cut into 3/4 inch thick slices
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon freshly grated nutmeg
2 teaspoons butter
1 teaspoon canola oil
1/2 cup apple cider
2-3 tablespoons finely chopped crystallized ginger

In medium sized bowl, toss apples with cinnamon, allspice and nutmeg
In large, non-stick skillet, heat butter and oil over medium heat
Add apple mixture, saute for one minute
Add cider, cover and reduce heat to medium-low
Simmer until the apples are tender, 12-15 minutes
Stir in ginger and serve hot
