Basic Fruit Crumble Topping

1/2 cup regular oats
3/4 cup flour
1/2 cup whole wheat pastry flour
1/4 cup chopped walntus or other nut of your choice
1/4 cup packed brown sugar
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
3 teaspooons honey
2 tablespoons walnut oil or other nut oil
1 egg yolk

Place oats in food processor and pulse until coarsely ground. Place oats in large bowl and add flours, nuts, brown sugar, salt, cinnamon, and nutmeg, and stir to combine. In a separate bowl, combine honey, oil, and egg yolk and stir with whisk. Add to flour mixture and stir until just smooth.
