1 tablespoon olive oil
1 small onion, minced
3 cloves garlic, minced
4 tomatoes, peeled and diced
1/4 cup capers
4 small potatoes, sliced
2 cups stock
2 cups dry white wine
4 small tuna steaks
salt, pepper, and cayenne to taste
Saute onion and garlic in olive oil until translucent.
Add tomatoes and capers and heat through.
Place potatoes on bottom of clay pot or baking dish.
Pour tomato mixture over potatoes.
Pour broth and wine over tomato mixture. Add cayenne to taste.
Bake for 20 minutes.
Sprinke tuna with salt, pepper, and cayenne to taste. Place tuna steaks on top of tomato mixture and bake for eight minutes more, until tuna is cooked through.
Variation: Saute a red and/or green bell pepper with the onions.
Variation: Saute a red and/or green bell pepper, a jalapeno, and a red cherry pepper with the onions.
