16 apricots, halved and pitted
1 teaspoon vanilla
6 ounces vermouth
3 ounces honey
Heat oven to 350. Lay apricots skin side up in overlapping rows in an ovenproof dish. Mix the vanilla with the vermouth and pour over apricots. Drizzle the honey over and bake in preheated oven for 20 minutes until apricots are tender.
Allow to cool, then chill. Serve with creme fraiche, whipped cream, or on top of yogurt.
