1 1/2 teaspoon coarse salt
4 tablespoons olive oil
freshly ground pepper
4 tablespoons basil cut into chiffonade
Slice tomatoes 1/4 inch thick. Spread evenly over 4 flat dishes. Sprinkle with salt and let stand for 20 minutes to extract flavor. Remove excess water with paper towels.
Drizzle each dish with 1 tablespoon of oil and season with pepper to taste. Sprinkle with basil. Serve with country bread.
