Flourless Cheese Souffle

1 1/8 cup quark
1 1/2 cup shredded Gruyere
4 eggs, separated
salt and pepper to taste

Combine the quark, grated Gruyere, and egg yolks. Add salt and pepper. Whip the egg whites until stiff and fold carefully into the cheese mixture. Pour into greased souffle dish at least 8 inches wide.

Bake at 425 for 30-40 minutes.
