Risi e Bisi

1 tablespoon olive oil
1 small yellow onion, chopped
1 cup arborio rice
3 cups vegetable stock
2 tablespoons chopped fresh parsley or 1 tablespoon dried
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 1/2 cups green peas, fresh or frozen
2-3 tablespoon grated Parmesan cheese

Heat oil an saute onion over medium heat 5-7 minutes stirring frequently
Stir in rice, 2 cups stock and seasonings, cook over low heat about 12 minutes, stirring frequently
Stir in peas and remaining 1 cup stock and cook 7-10 minutes more until rice is tender
Remove from heat and stir in cheese
Let stand for a few minutes before serving
