Brussels Sprouts with Lemon and Pistachios

3 tablespoons oil
1 minced shallot
12 large Brussels sprouts, leaves and cores separated
3/4cup pistachios
2 tablespoons lemon juice

Heat oil. Saute shallots about 20 seconds. Add Brussels sprouts and pistachios. Saute until Brussels sprouts are bright green; about 3 minutes. Drizzle with lemon juice.
