1 1/2 pound cauliflower
1 1/2 cups water
1 cup milk
2 tablespoons oil
Heat oven to 250. Cut 2 ?steaks? from cauliflower, cutting through the middle from the top all the way through to the bottom. Cut remaining cauliflower into florets.
Combine florets, 1 1/2 cups water, and milk in saucepans. Sprinkle with salt and pepper. Bring to boil and boil 10 minutes, until florets are tender. Remove florets from cooking liquid, reserving liquid. Bake florets until slightly dry, then puree with 1 cup cooking liquid.
Increase oven to 350. Heat oil in ovenproof skillet and cook steaks 2 minutes per side or until brown. Transfer to oven and bake until tender. Serve steaks atop puree.
