1 cucumber, diced
1 large bell pepper, diced
4 ripe tomatoes, diced
2 1/2 ounces Greek or Spanish olives
bunch of scallions, sliced on diagonal
2 tablespoons chopped fresh flat-leaf parsley
2 pita breads, toasted until crisp and golden
3 tablespoons olive oil
salt and pepper to taste

Toss together cucumber, pepper, tomatoes, olives, onions, and parsley in a large bowl.

Break pitas into bite-sized pieces and add to salsa.

Whisk together lemon juice, olive oil, and seasoning. Pour over salad and toss together.
