Jack Cheese and Corn Tortilla Quesadillas

6 corn tortillas
3/4 cup grated Monterey Jack cheese


Heat nonstick skillet over high heat
Place tortilla in pan and top with 1/3 of cheese
Place another tortilla on top
Cook until bottom tortilla is lightly toasted, about 1 1/2 minutes
Turn over and cook until cheese has melted and other tortilla is slightly colored, about 1 1/2 minutes more
Place in foil in warm oven while other quesadillas are cooking

Serve with salsa, guacamole, sour cream or bean dip
