1 1/2 pounds cod
1 tablespoon oil
1 green pepper, cut into strips
1 yellow onion, sliced
2 cloves garlic, chopped
1 can whole roma tomatoes with juice
1 can white beans, rinsed and drained
1/4 cup dry white wine
1 tablespoon chopped fresh basil
salt and pepper
2 teaspoons capers, drained
1/4 cup chopped parsley
Heat oven to 425. Place fish on baking dish lightly coasted with cooking spray.
In medium skillet over medium heat, saute pepper, onion, and garlic in oil until tender. Add tomatoes, beans, wine, seasonings, and capers and simmer 5 minutes. Pour over fish.
Bake uncovered about 20 minutes. Sprinkle with parsley.
