Pumpkin Puree (for pie)

Simmer cubed, peeled and seeded sugar pumpkin in water until tender, then drain well and puree in the food processor.

Or, seed the pumpkin, cut it in large pieces, and bake them with a little water for 1.5 hours at 375?F, then scrape out the flesh and puree.
