Greek Green Beans

Salt and freshly ground black pepper
2 pounds green beans, washed and trimmed
2 plum tomatoes, grated on box grater
Several tablespoons extra virgin olive oil
Fresh lemon juice to taste

Bring a large pot of water to a boil and salt it. Boil beans until just barely tender.

Drain and rinse with cold water until cool. Toss beans with tomatoes, olive oil, salt, pepper and lemon juice to taste.
Optional: for a more hearty dish, top with feta or another cheese and broil before serving.
