Beet Crudites

beets (red, golden, or a mixture)
walnut oil
sherry vinegar
sea salt

Cook beets through by roasting or boiling them. Peel cooked beets and cut them into three-quarter inch cubes. Tossed them with a little ? very little ? walnut oil and sherry vinegar (olive oil and a different vinegar would have been O.K. too) and spear them with toothpicks. Sprinkle with salt.
